Make this creamy, restaurant-style nacho cheese dip in just 10 minutes. This easy recipe uses real cheddar to create a smooth, velvety texture perfect for game day or topping your favorite tacos.

Ingredients

Scale
  • 1 tablespoon butter
  • 1 tablespoon all-purpose flour
  • 1 cup milk (whole milk works best for creaminess)
  • 8 ounces sharp cheddar cheese, freshly shredded
  • 1/4 cup evaporated milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon chili powder (optional, for a slight kick)

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly, to create a roux.
  3. Slowly whisk in the milk until the mixture is smooth and begins to thicken slightly. Continue cooking for about 2 minutes, stirring often.
  4. Reduce the heat to low. Add the shredded cheddar cheese one handful at a time, stirring until each addition is completely melted and smooth before adding the next. Do not let the mixture boil.
  5. Stir in the evaporated milk, salt, garlic powder, onion powder, and chili powder, if using. Mix until the sauce is uniform and velvety.
  6. Remove from heat immediately. Serve warm over tortilla chips, fries, or tacos.

Notes

  • Shredding your own cheese prevents clumping better than pre-shredded cheese.
  • For a thinner sauce, add a tablespoon of extra milk or evaporated milk at the end.
  • This homemade cheese sauce is best eaten right away for the smoothest texture.
