Make individual servings of a creamy cheesecake dessert flavored with classic carrot cake spices and shredded carrots, requiring no oven time.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup heavy cream, cold
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground ginger
  • 1/2 cup finely shredded carrots, packed
  • 1/4 cup chopped pecans or walnuts (optional)
  • 4 ounces cream cheese, softened (for topping)
  • 1/4 cup powdered sugar (for topping)
  • 1 tablespoon milk or cream (for topping)

Instructions

  1. Prepare the crust: Mix graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
  2. Press about 2 tablespoons of the crust mixture firmly into the bottom of 6 small cups or ramekins. Place the cups in the freezer while you prepare the filling.
  3. Make the cheesecake filling: Beat the 8 ounces of softened cream cheese until smooth. Gradually beat in 1 cup of powdered sugar, vanilla extract, cinnamon, nutmeg, and ginger until combined.
  4. In a separate bowl, whip the 1/2 cup of cold heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture.
  5. Fold in the shredded carrots and chopped nuts (if using) into the cheesecake mixture.
  6. Spoon or pipe the cheesecake filling evenly over the chilled crusts in the cups. Smooth the tops.
  7. Chill the cups in the refrigerator for at least 4 hours, or until firm.
  8. Prepare the topping: Beat the remaining 4 ounces of softened cream cheese with 1/4 cup powdered sugar and 1 tablespoon milk until smooth and spreadable.
  9. Once the cheesecake cups are set, top each cup with a dollop of the cream cheese frosting. Garnish with extra nuts or a sprinkle of cinnamon, if desired.

Notes

  • For the best texture, ensure your cream cheese is fully softened before mixing.
  • You can substitute vanilla wafers or gingersnap cookies for the graham crackers in the crust.
  • These cups set best when refrigerated for a minimum of 4 hours, but overnight chilling yields the firmest result.
