Ingredients
Scale
1 cup unsweetened shredded coconut
1/2 cup vanilla or unflavored protein powder
1/4 cup cocoa powder
1/4 cup natural peanut butter or almond butter
2 tablespoons maple syrup or honey
1/4 cup melted coconut oil
1/4 cup dairy-free chocolate chips (for topping, optional)
Instructions
Line a mini muffin tin with paper liners.
In a medium bowl, combine the shredded coconut, protein powder, and cocoa powder. Mix well.
Add the peanut butter, maple syrup, and melted coconut oil to the dry ingredients.
Stir everything together until a thick, uniform dough forms. If the mixture is too dry, add 1 teaspoon of water or milk at a time until it holds together.
Press the dough firmly into the prepared muffin liners, filling each cup about three-quarters full.
If using, melt the chocolate chips and drizzle or top each cup.
Place the muffin tin in the freezer for at least 30 minutes, or until the cups are firm.
Store the finished protein cups in an airtight container in the refrigerator or freezer.
Notes
For a firmer texture, use only coconut oil and omit the nut butter.
You can substitute almond butter for peanut butter if you have a nut allergy, or use sunflower seed butter.
