- 1 cup Medjool dates, pitted
- 1 cup raw almonds
- 1/2 cup shredded unsweetened coconut
- Zest of 1 large lemon
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon sea salt
- 1/4 cup almond flour (optional, for texture adjustment)
- Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- Place the almonds in a food processor and process until they form a coarse, crumbly meal. Do not over-process into butter.
- Add the pitted dates, shredded coconut, lemon zest, lemon juice, and salt to the food processor.
- Process the mixture until it comes together into a sticky ball or a uniform, thick dough. Stop frequently to scrape down the sides.
- If the mixture seems too wet or sticky, add the optional almond flour one tablespoon at a time until the dough holds its shape when pressed.
- Transfer the dough to the prepared pan. Press the mixture firmly and evenly into the bottom of the pan using your fingers or the back of a spoon.
- Place the pan in the refrigerator and chill for at least 2 hours, or until firm enough to slice.
- Use the parchment paper overhang to lift the block out of the pan. Cut into 12 or 16 squares.
Notes
- Store the bars in an airtight container in the refrigerator for up to one week.
- For a cleaner cut, chill the bars for 30 minutes after slicing before serving.
- If your dates are dry, soak them in hot water for 10 minutes, then drain well before using.
