Prepare individual servings of creamy, tangy lemon pie filling in cups without using an oven. This recipe is quick and requires simple ingredients.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted (for crust)
  • 1 (14 ounce) can sweetened condensed milk
  • 1/2 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar (for topping)

Instructions

  1. Combine graham cracker crumbs and 1/4 cup granulated sugar in a bowl. Pour in melted butter and mix until the crumbs are evenly moistened.
  2. Press about 2 tablespoons of the crumb mixture firmly into the bottom of 6 small serving cups, ramekins, or muffin liners. Place the cups in the refrigerator to chill while you prepare the filling.
  3. In a medium bowl, whisk together the sweetened condensed milk, lemon juice, lemon zest, and vanilla extract until smooth. The mixture will thicken slightly as you mix.
  4. In a separate, chilled bowl, beat the heavy whipping cream until soft peaks form. Gradually add the 2 tablespoons of powdered sugar and continue beating until stiff peaks form.
  5. Gently fold about one-third of the whipped cream into the lemon mixture to lighten it. Then, fold in the remaining whipped cream until just combined, being careful not to deflate the mixture.
  6. Spoon or pipe the lemon cream filling evenly over the chilled crusts in the 6 cups.
  7. Cover the cups loosely with plastic wrap and chill in the refrigerator for at least 4 hours, or until the filling is firm.
  8. Serve cold directly from the cups.

Notes

  • You can substitute vanilla wafers or shortbread cookies for the graham crackers in the crust mixture.
  • For a brighter presentation, garnish the top of each cup with a small curl of fresh lemon zest just before serving.
  • If you do not have fresh lemons, you can use bottled lemon juice, but fresh juice provides a better flavor.
