- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/4 cup honey or maple syrup
- 1/4 cup protein powder (vanilla or unflavored recommended)
- 1 teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
- Line an 8×8 inch pan with parchment paper, leaving an overhang for easy removal.
- In a medium bowl, combine the rolled oats, protein powder, and chia seeds if using.
- In a separate, microwave-safe bowl, warm the peanut butter and honey (or maple syrup) together for about 30 seconds until easily stirrable.
- Pour the peanut butter mixture and vanilla extract into the dry ingredients.
- Stir well until everything is completely mixed and a thick dough forms. You may need to use your hands toward the end.
- Press the mixture firmly and evenly into the prepared pan. Use the back of a measuring cup for a flat surface.
- Refrigerate for at least 1 hour, or until completely firm.
- Lift the parchment paper overhang to remove the block from the pan. Cut into 12 or 16 bars.
- Store leftovers in an airtight container in the refrigerator.
Notes
- Adjust the sweetener to your taste preference.
- If the mixture seems too dry, add a teaspoon more of peanut butter.
- If the mixture is too wet, add a tablespoon more of protein powder or oats.
- Feel free to mix in chocolate chips for extra flavor.
