Make quick, easy peanut butter bars using puffed rice cereal without turning on your oven.

Ingredients

Scale
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1/2 cup butter or margarine
  • 1 teaspoon vanilla extract
  • 6 cups puffed rice cereal

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a medium saucepan over medium heat, combine the peanut butter, sugar, and butter. Stir constantly until the mixture is completely melted and smooth. Do not let it boil.
  3. Remove the saucepan from the heat. Stir in the vanilla extract.
  4. Pour the melted mixture over the puffed rice cereal in a large bowl. Stir gently until the cereal is evenly coated.
  5. Press the mixture firmly and evenly into the prepared baking pan.
  6. Refrigerate for at least 1 hour, or until firm.
  7. Lift the bars out of the pan using the parchment paper overhang and cut into squares before serving.

Notes

  • For a chocolate topping, melt 1 cup of semi-sweet chocolate chips with 1 tablespoon of shortening and spread over the chilled bars before cutting.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute crunchy peanut butter for creamy if you prefer texture.
