Make a rich, creamy pumpkin pie without turning on your oven. This easy recipe uses a graham cracker crust and sets up nicely in the refrigerator.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 1 (15 ounce) can pure pumpkin puree
  • 1 (14 ounce) can sweetened condensed milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 (8 ounce) package cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold

Instructions

  1. Prepare the crust: Mix graham cracker crumbs, 1/4 cup sugar, and melted butter in a medium bowl until evenly moistened. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Chill the crust for at least 15 minutes.
  2. In a large bowl, beat the softened cream cheese until smooth. Add the pumpkin puree, sweetened condensed milk, cinnamon, ginger, nutmeg, and salt. Beat until completely combined and smooth. Stir in the vanilla extract.
  3. In a separate, clean bowl, whip the cold heavy whipping cream until stiff peaks form.
  4. Gently fold the whipped cream into the pumpkin mixture until just combined. Do not overmix.
  5. Spoon the filling evenly into the chilled graham cracker crust.
  6. Cover the pie loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until the filling is firm.
  7. Serve cold, optionally topped with whipped cream or a dusting of cinnamon.

Notes

  • For a quicker set time, you can chill the pie for 4 hours, but overnight chilling results in the firmest texture.
  • If you do not have graham cracker crumbs, you can substitute vanilla wafer crumbs for the crust.
  • Use pure pumpkin puree, not pumpkin pie filling.
