Make individual portions of creamy, no-bake cheesecake layered with raspberry and white chocolate, perfect for parties or simple desserts.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 4 ounces white chocolate, melted and slightly cooled
  • 1 cup fresh or thawed frozen raspberries
  • 1/4 cup raspberry jam or preserves (optional, for layering)

Instructions

  1. Combine the graham cracker crumbs and melted butter in a bowl. Mix until the crumbs are evenly moistened.
  2. Divide the crumb mixture evenly among 4 to 6 small jars (about 8 ounces each). Press the crumbs down lightly to form the crust layer. Place jars in the refrigerator while you prepare the filling.
  3. In a large bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  4. In a separate bowl, whip the cold heavy whipping cream until stiff peaks form.
  5. Gently fold the whipped cream into the cream cheese mixture until just combined.
  6. Fold in the slightly cooled melted white chocolate until the filling is uniform.
  7. Spoon or pipe half of the cheesecake filling over the crust layer in each jar.
  8. If using jam, add a small layer of raspberry jam over the first filling layer in each jar.
  9. Top with the remaining cheesecake filling.
  10. Place a few fresh raspberries on top of each jar for garnish.
  11. Cover the jars and chill in the refrigerator for at least 4 hours, or until firm.

Notes

  • Use good quality white chocolate for the best flavor in the filling.
  • If the white chocolate hardens too much before mixing, warm it slightly over a double boiler or in the microwave for a few seconds.
  • You can substitute vanilla wafers or shortbread cookies for graham crackers in the crust.
  • Chill the jars overnight for the firmest texture.
