Make these simple, creamy, no-bake cheesecake bars featuring bright lemon zest and fresh strawberry flavor. They set up perfectly in the refrigerator without using your oven.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar (for crust)
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1/2 cup granulated sugar (for filling)
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream, cold
  • 1/2 cup strawberry puree (from fresh or thawed strawberries)
  • Optional: Fresh strawberries for topping

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. Prepare the crust: Mix graham cracker crumbs, 1/4 cup granulated sugar, and melted butter until combined. Press the mixture firmly and evenly into the bottom of the prepared pan. Chill for 15 minutes.
  3. Prepare the filling: In a large bowl, beat the softened cream cheese, powdered sugar, 1/2 cup granulated sugar, lemon juice, lemon zest, and vanilla extract until smooth.
  4. In a separate bowl, whip the cold heavy whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.
  5. Divide the filling: Scoop about two-thirds of the filling mixture into the prepared crust and spread evenly.
  6. Gently fold the strawberry puree into the remaining one-third of the cream cheese filling. Dollop this strawberry mixture over the lemon layer in the pan. Use a knife or skewer to gently swirl the layers together for a marbled effect.
  7. Cover the pan loosely with plastic wrap and refrigerate for at least 6 hours, or preferably overnight, until completely firm.
  8. Use the parchment overhang to lift the chilled bars from the pan. Slice into 16 squares. Top with sliced fresh strawberries before serving.

Notes

  • For the firmest bars, chill them for a full 8 hours or overnight.
  • If you do not have graham crackers, digestive biscuits work as a substitute for the crust.
  • Use fresh lemon juice for the best zesty flavor.
  • To make strawberry puree, blend fresh or thawed strawberries until smooth, then strain if you prefer a seedless topping.
