Make easy, layered dessert bars featuring a salty pretzel crust, a creamy filling, and a sweet strawberry gelatin topping. This dessert requires no oven time.

Ingredients

Scale
  • 1 cup crushed pretzels
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream, cold
  • 1 package (3 ounces) strawberry flavored gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 1 cup frozen sliced strawberries, thawed

Instructions

  1. Combine the crushed pretzels, melted butter, and 1/4 cup granulated sugar in a bowl. Press this mixture firmly into the bottom of an 8×8 inch baking pan lined with parchment paper, leaving an overhang for easy removal. Place the crust in the freezer for 15 minutes to set.
  2. In a separate bowl, beat the softened cream cheese until smooth. Gradually beat in the powdered sugar until fully combined.
  3. In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined. Spread this cream cheese layer evenly over the chilled pretzel crust. Return the pan to the refrigerator for 30 minutes to firm up.
  4. Prepare the gelatin according to package directions, substituting the required amount of cold water with 1 cup of cold water and dissolving the gelatin completely in 1 cup of boiling water. Let the gelatin mixture cool at room temperature until it is slightly thickened, about 20 to 30 minutes. Do not let it set fully.
  5. Gently fold the thawed sliced strawberries into the slightly thickened gelatin mixture.
  6. Pour the strawberry gelatin mixture over the firm cream cheese layer. Cover the pan loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the gelatin is completely set.
  7. Use the parchment paper overhang to lift the dessert from the pan. Cut into 16 even bars before serving.

Notes

  • For a cleaner slice, run your knife under hot water and wipe it dry between each cut.
  • If you prefer a saltier crust, use slightly more crushed pretzels.
  • You can use fresh strawberries instead of frozen, but ensure they are sliced thinly.
