Make safe-to-eat, no-bake chocolate chip cookie dough truffles that require no oven time. This recipe yields sweet, bite-sized treats perfect for parties.

Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk (any kind)
  • 1 cup all-purpose flour, heat-treated
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips
  • 4 ounces semi-sweet chocolate, melted (for dipping)

Instructions

  1. Heat-treat the flour: Spread the flour on a microwave-safe plate. Microwave on high in 30-second intervals, stirring between each, until the flour reaches 165°F (74°C) internally. Let it cool completely before using.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy.
  3. Mix in the vanilla extract and milk until just combined.
  4. Gradually add the cooled, heat-treated flour and salt. Mix on low speed until a dough forms. Do not overmix.
  5. Stir in the mini chocolate chips by hand.
  6. Roll the dough into small balls, about 1 inch in diameter. Place them on a parchment-lined baking sheet.
  7. Chill the dough balls in the refrigerator for at least 30 minutes to firm up.
  8. Melt the semi-sweet chocolate in a microwave-safe bowl in 30-second bursts, stirring until smooth.
  9. Dip each chilled dough ball into the melted chocolate, allowing excess to drip off. Return them to the parchment-lined sheet.
  10. Refrigerate the truffles until the chocolate coating is set, about 15 to 20 minutes.

Notes

  • To heat-treat flour in the oven, bake it on a baking sheet at 350°F (175°C) for 5 minutes, then cool.
  • If you prefer not to dip them, you can skip the melted chocolate step and simply chill the dough balls.
  • Store finished truffles in an airtight container in the refrigerator for up to one week.
