Make these simple, two-layer bars using dates for sweetness and a rich chocolate topping. They require no oven time and set in the refrigerator.

Ingredients

Scale
  • 1 cup Medjool dates, pitted
  • 1/2 cup unsweetened shredded coconut, plus 1/4 cup for topping
  • 1/4 cup raw almonds or walnuts
  • 1 tablespoon coconut oil, melted
  • 1/4 teaspoon sea salt
  • 1/2 cup dark chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Line an 8×4 inch loaf pan with parchment paper, leaving an overhang for easy removal.
  2. Combine the pitted dates, 1/2 cup coconut, almonds, 1 tablespoon melted coconut oil, and salt in a food processor.
  3. Process until the mixture sticks together firmly when pressed. You may need to stop and scrape down the sides.
  4. Press this base mixture evenly into the bottom of the prepared loaf pan. Press firmly to create a compact layer.
  5. Place the pan in the freezer while you prepare the topping.
  6. In a small, microwave-safe bowl, combine the chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring well after each, until smooth.
  7. Pour the melted chocolate mixture over the date base in the pan. Spread it evenly.
  8. Sprinkle the remaining 1/4 cup of shredded coconut over the chocolate layer.
  9. Refrigerate the bars for at least 2 hours, or until the chocolate is completely firm.
  10. Use the parchment paper overhang to lift the bars out of the pan. Cut into 8 to 10 squares before serving.

Notes

  • Store leftover bars in an airtight container in the refrigerator for up to one week.
  • For a firmer texture, you can freeze the bars and let them sit at room temperature for 5 minutes before eating.
  • You can substitute pecans or cashews for the almonds in the base layer.
