1 cup chopped chocolate sandwich cookies (for mixing in and topping)
Instructions
Combine the cookie crumbs and melted butter in a small bowl. Mix until the crumbs are evenly moistened.
Press about 1 tablespoon of the crumb mixture into the bottom of 6 small serving cups or ramekins to form the crust. Place the cups in the freezer while you prepare the filling.
In a medium bowl, beat the softened cream cheese until smooth. Add the powdered sugar and vanilla extract, mixing until fully combined.
Gently fold the thawed whipped topping into the cream cheese mixture until no streaks remain.
Fold in 1/2 cup of the chopped chocolate sandwich cookies into the cream filling.
Spoon or pipe the filling evenly over the chilled crusts in the 6 cups.
Top each cup with the remaining chopped cookies.
Chill the cups in the refrigerator for at least 2 hours before serving.
Notes
You can use any brand of chocolate sandwich cookie for the crust and filling.
For a firmer texture, freeze the assembled cups for 30 minutes before serving.
If you do not have individual cups, you can press the crust into the bottom of a 9-inch pie plate and slice after chilling.
