Make delicate, buttery oatmeal lace cookies that spread thin while baking, resulting in crispy edges and a slightly chewy center.

Ingredients

Scale
  • 1/2 cup unsalted butter
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup rolled oats (not instant)
  • 1/4 cup finely chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit. Line baking sheets with parchment paper or silicone mats. Do not use wax paper.
  2. In a medium saucepan over medium heat, melt the butter. Remove from heat and stir in both brown and granulated sugars until combined.
  3. Whisk in the egg and vanilla extract until the mixture is smooth.
  4. In a separate bowl, whisk together the flour and salt. Add the dry ingredients to the wet ingredients and mix until just combined.
  5. Stir in the rolled oats and chopped nuts, if using. The dough will be thick.
  6. Drop rounded teaspoons of dough onto the prepared baking sheets, spacing them at least 3 inches apart because they will spread significantly.
  7. Bake for 8 to 10 minutes. The edges should be deeply golden brown and lacy, and the centers will look slightly underdone.
  8. Remove the sheets from the oven. Let the cookies cool on the baking sheet for 2 minutes to set their shape.
  9. Carefully transfer the cookies to a wire rack to cool completely. They will crisp up as they cool.

Notes

  • For the best lacy spread, use parchment paper or silicone mats; aluminum foil will cause sticking and uneven spreading.
  • If you prefer a chewier center, slightly underbake by about 1 minute.
  • Do not overmix the batter once the flour is added to keep the cookies tender.
