Cook salmon fillets and spinach together on one pan with a rich, creamy garlic butter sauce for a quick, flavorful dinner.

Ingredients

Scale
  • 4 (6 oz) salmon fillets, skin on or off
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1 tablespoon fresh lemon juice

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.
  2. Pat the salmon fillets dry with paper towels. Rub them with olive oil, then season both sides with salt and pepper. Place the fillets on the prepared baking sheet.
  3. Bake the salmon for 10 minutes while you prepare the sauce.
  4. While the salmon bakes, melt the butter in a small saucepan over medium heat. Add the minced garlic and cook for about 1 minute until fragrant, do not let it brown.
  5. Pour in the heavy cream and bring the mixture to a gentle simmer. Reduce the heat to low.
  6. Stir in the Parmesan cheese until the sauce is smooth and slightly thickened. Remove the pan from the heat.
  7. After the salmon has baked for 10 minutes, remove the pan from the oven. Pour the creamy garlic butter sauce evenly over and around the salmon fillets.
  8. Return the pan to the oven and bake for another 5 to 7 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Remove the pan from the oven. Scatter the fresh spinach around the salmon on the pan. The residual heat will wilt the spinach quickly.
  10. Drizzle the lemon juice over the salmon and spinach before serving immediately.

Notes

  • For a thicker sauce, let it simmer for an extra minute before adding the cheese.
  • Do not overcook the salmon; check for doneness around the 15-minute mark total baking time.
  • You can use frozen spinach if you thaw and squeeze out all excess water first.
