Ingredients
Scale
4 (6 ounce) tilapia fillets
1 tablespoon olive oil
1/2 cup heavy cream
1/4 cup chicken broth
4 cloves garlic, minced
4 tablespoons unsalted butter, divided
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
1 cup cherry tomatoes, halved
1 bunch asparagus, trimmed
1 teaspoon dried Italian seasoning
1 tablespoon fresh lemon juice
Instructions
Preheat your oven to 400 degrees Fahrenheit. Line a large baking sheet with parchment paper for easy cleanup.
Pat the tilapia fillets dry with paper towels and season both sides with salt and pepper. Place the fillets on one side of the prepared baking sheet.
Arrange the trimmed asparagus and halved cherry tomatoes around the fish on the baking sheet. Drizzle the vegetables with 1 tablespoon of olive oil and sprinkle with Italian seasoning.
In a small saucepan over medium heat, melt 2 tablespoons of butter. Add the minced garlic and cook for 1 minute until fragrant. Do not let the garlic brown.
Pour in the heavy cream and chicken broth. Bring the mixture to a gentle simmer, stirring occasionally. Reduce the heat to low and stir in the Parmesan cheese until the sauce is smooth. Remove from heat.
Pour half of the creamy garlic butter sauce evenly over the tilapia fillets.
Place the baking sheet in the preheated oven and bake for 10 minutes.
Remove the pan from the oven. Spoon the remaining sauce over the fish and vegetables. Dot the tops of the fish with the remaining 2 tablespoons of cold butter, cut into small pieces.
Return the pan to the oven and bake for another 5 to 8 minutes, or until the fish flakes easily with a fork and the sauce is bubbly.
Remove from the oven. Drizzle the lemon juice over the fish and serve immediately directly from the pan.
Notes
For a thicker sauce, allow the cream mixture to simmer for an extra minute before adding the cheese.
You can substitute spinach for the asparagus or tomatoes if preferred. Add spinach during the last 5 minutes of baking.
If you do not have heavy cream, you can use half-and-half, but the sauce will be thinner.
