A hearty and rich Irish-style beef stew, simmered in Guinness stout with tender beef, potatoes, and carrots. This one-pot wonder is perfect for a comforting meal on a chilly day.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 2 pounds beef chuck, cut into 1-inch pieces
  • 1 large onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 (12 ounce) bottle Guinness stout
  • 4 cups beef broth
  • 1 tablespoon tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and freshly ground black pepper to taste
  • 1 pound potatoes, peeled and cubed
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add beef and brown on all sides. Remove beef from the pot and set aside.
  3. Add onion, carrots, and celery to the pot and cook until softened, about 5-7 minutes.
  4. Stir in garlic and cook for 1 minute more until fragrant.
  5. Pour in Guinness stout and scrape up any browned bits from the bottom of the pot.
  6. Return beef to the pot. Add beef broth, tomato paste, thyme, and rosemary.
  7. Season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1.5 hours.
  8. Add potatoes to the pot, cover, and continue to simmer for another 45 minutes to 1 hour, or until beef and potatoes are tender.
  9. If you prefer a thicker stew, mix flour with a little water to make a slurry, then stir it into the stew and simmer for a few more minutes until thickened.
  10. Taste and adjust seasoning as needed.
  11. Serve hot, garnished with fresh parsley.

Notes

  • For a deeper flavor, you can marinate the beef in Guinness overnight.
  • Feel free to add other root vegetables like parsnips or turnips.
  • This stew tastes even better the next day.
