Make this simple, creamy orzo pasta dish in one pot. It features lemon, garlic, Parmesan cheese, and pre-cooked chicken sausage for a quick weeknight dinner.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound pre-cooked chicken sausage, sliced
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 2 cups fresh spinach

Instructions

  1. Heat the olive oil in a large skillet or pot over medium heat. Add the sliced chicken sausage and cook until lightly browned, about 4 minutes. Remove the sausage and set it aside.
  2. Add the minced garlic to the same pot and cook for 30 seconds until fragrant. Do not let it burn.
  3. Add the orzo pasta to the pot and toast it for 1 minute, stirring constantly.
  4. Pour in the chicken broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 10 to 12 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
  5. Remove the pot from the heat. Stir in the heavy cream, Parmesan cheese, lemon juice, lemon zest, and pepper. Mix until the sauce is creamy.
  6. Stir in the cooked chicken sausage and fresh spinach. Continue stirring until the spinach wilts, about 1 minute.
  7. Taste and add salt if needed. Serve immediately.

Notes

  • You can substitute chicken sausage with Italian sausage or omit it for a vegetarian option.
  • If the sauce seems too thick, add a splash more broth or cream to reach your desired consistency.
  • Use fresh lemon juice for the best flavor in this orzo recipe.
