Ingredients
Scale
1 Duck Breast (about 6-8 oz)
1 teaspoon fresh Rosemary, chopped
1/2 teaspoon Orange Zest
1/4 teaspoon Salt
1/8 teaspoon Black Pepper
1 tablespoon Olive Oil
Instructions
Preheat your oven to 400°F (200°C).
Score the duck skin in a crosshatch pattern, being careful not to cut into the meat.
Rub the duck breast all over with salt, pepper, chopped rosemary, and orange zest.
Place the duck breast, skin-side down, in a cold, oven-safe skillet.
Place the skillet over medium heat and render the fat for 8-10 minutes until the skin is golden brown and crisp. Pour off excess fat as it accumulates.
Flip the duck breast and sear the flesh side for 1 minute.
Transfer the skillet to the preheated oven. Roast for 8-12 minutes for medium-rare (internal temperature of 135°F or 57°C). Adjust time for your preferred doneness.
Remove the duck from the oven and let it rest on a cutting board for 5-10 minutes before slicing thinly against the grain.
Notes
Resting the duck is crucial for juicy meat.
Save the rendered duck fat for roasting potatoes later.
Use a reliable meat thermometer for perfect results.
