Make this simple overnight chia pudding the night before for a quick, refreshing, and healthy breakfast topped with bright citrus and sweet berries.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon maple syrup or honey (optional)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup mixed berries (strawberries, blueberries, raspberries)
  • 1/2 small orange or grapefruit, segmented

Instructions

  1. In a jar or container, combine the chia seeds, milk, maple syrup (if using), vanilla extract, and salt.
  2. Stir well to ensure the chia seeds are fully submerged and do not clump at the bottom.
  3. Cover the container and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens to a pudding consistency.
  4. In the morning, stir the pudding again. If it is too thick, add a splash more milk.
  5. Top the chia pudding with your fresh berry mix and citrus segments just before serving.

Notes

  • You can adjust the liquid ratio to achieve your desired thickness. More liquid makes it thinner.
  • For a creamier texture, use full-fat coconut milk or dairy milk.
  • Prep the citrus and berries the night before to save time in the morning.
