Enjoy a creamy and satisfying Alfredo sauce without the heavy pasta! This recipe uses fresh zucchini noodles tossed in a rich Parmesan sauce for a quick, low-carb dinner option. Alex makes this when you crave comfort food fast.

Ingredients

Scale
  • 2 medium zucchini
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese, plus more for serving
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Use a spiralizer to turn the zucchini into noodles (zoodles). Set them aside.
  2. Melt the butter in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and cook for about 30 seconds until fragrant. Do not let it burn.
  4. Pour in the heavy cream. Bring the mixture to a gentle simmer.
  5. Reduce the heat to low. Whisk in the grated Parmesan cheese until the sauce is smooth and thickened slightly.
  6. Season the sauce with salt and pepper. Taste and adjust seasoning if needed.
  7. Add the zucchini noodles to the skillet. Toss everything gently for 1 to 2 minutes, just until the zoodles are coated and slightly warmed through. Avoid overcooking the zucchini.
  8. Serve immediately, topping each portion with extra grated Parmesan cheese.

Notes

  • Do not overcook the zucchini noodles; they should remain slightly crisp.
  • Pat the zucchini noodles dry before adding them to the sauce if they seem very wet.
  • You can add a squeeze of lemon juice at the end for brightness.
