These peanut butter protein muffins are a delicious and healthy way to start your day or refuel after a workout. They are packed with protein and have a wonderful nutty flavor from the peanut butter. You can customize them with your favorite mix-ins and enjoy them warm or at room temperature.

Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup protein powder (whey or plant-based)
  • ½ cup peanut butter
  • ½ cup unsweetened applesauce
  • ½ cup milk (dairy or non-dairy)
  • ¼ cup maple syrup or honey
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • Optional mix-ins: chocolate chips, chopped nuts, berries

Instructions

  1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, and salt.
  3. In a separate bowl, whisk together the peanut butter, applesauce, milk, maple syrup (or honey), eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  5. Gently fold in any optional mix-ins you are using.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer peanut butter flavor, use natural peanut butter.
  • If your protein powder is sweetened, you may want to reduce the amount of maple syrup or honey.
  • You can substitute half of the all-purpose flour with whole wheat flour for added fiber.
  • These muffins can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
  • For longer storage, freeze the muffins individually wrapped.
