Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup peanut butter
  • 1/4 cup protein powder (whey or plant-based)
  • 1/4 cup sweetener (honey, maple syrup, or sugar)
  • 1/4 cup milk (dairy or non-dairy)
  • 1 egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/4 cup mix-ins like chocolate chips, chopped nuts, or berries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it well.
  2. In a large bowl, whisk together the flour, protein powder, baking powder, baking soda, and salt.
  3. In a separate bowl, combine the peanut butter, sweetener, milk, and egg. Mix until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. If using, gently fold in your chosen mix-ins.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For a richer peanut butter flavor, use natural peanut butter.
  • Adjust the sweetener to your preference.
  • You can substitute peanut flour for some of the all-purpose flour for an even nuttier taste and extra protein.
  • Feel free to experiment with different protein powders.
  • These muffins freeze well for future enjoyment.
