Make these easy, bite-sized pecan pie balls that capture the flavor of classic pecan pie without turning on your oven. They are perfect for holiday platters or quick snacks.

Ingredients

Scale
  • 1 cup finely chopped pecans
  • 1 cup graham cracker crumbs
  • 1/2 cup powdered sugar, plus extra for dusting
  • 1/2 cup light corn syrup
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips (for dipping)
  • 1 tablespoon coconut oil (optional, for dipping)

Instructions

  1. Combine the chopped pecans, graham cracker crumbs, and 1/2 cup powdered sugar in a medium bowl. Mix well.
  2. In a separate small bowl, whisk together the corn syrup, melted butter, vanilla extract, and salt until smooth.
  3. Pour the wet ingredients into the dry ingredients. Stir until a thick, uniform dough forms.
  4. Place the dough in the refrigerator for 30 minutes to firm up slightly.
  5. Roll the chilled dough into small, one-inch balls. Place them on a parchment-lined baking sheet.
  6. Melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  7. Dip each pecan ball halfway into the melted chocolate, or drizzle with chocolate.
  8. Return the balls to the parchment paper and let the chocolate set completely at room temperature or in the refrigerator for 15 minutes.

Notes

  • You can substitute vanilla wafers for graham crackers for a slightly different texture.
  • For a richer flavor, toast the pecans lightly before chopping them.
  • Store these balls in an airtight container in the refrigerator for up to one week.
