Make this simple pecan pie bark that captures classic pecan pie flavor in a quick, break-apart candy format using a buttery graham cracker base.

Ingredients

Scale
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup (1 stick) unsalted butter, melted
  • 1/2 cup packed light brown sugar
  • 1 cup light corn syrup
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 1/2 cups pecan halves, lightly toasted
  • Optional: 1/2 cup semi-sweet chocolate chips

Instructions

  1. Line an 8×8 inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Combine graham cracker crumbs and melted butter in a bowl. Press this mixture firmly and evenly into the bottom of the prepared pan to form the crust.
  3. In a medium saucepan, combine the brown sugar, corn syrup, granulated sugar, heavy cream, vanilla extract, and salt.
  4. Cook the mixture over medium heat, stirring constantly, until it reaches 240 degrees Fahrenheit (soft-ball stage) on a candy thermometer. This takes about 5 to 7 minutes.
  5. Remove the saucepan from the heat. Stir in the toasted pecans until they are evenly coated.
  6. Pour the pecan mixture over the graham cracker crust and spread it into an even layer.
  7. If using chocolate, sprinkle the chocolate chips evenly over the hot topping immediately after spreading. Let it sit for 5 minutes, then spread the melted chocolate if desired.
  8. Refrigerate the bark for at least 2 hours, or until completely firm.
  9. Lift the bark out of the pan using the parchment overhang. Break the bark into irregular pieces before serving or storing.

Notes

  • To toast pecans, spread them on a baking sheet and bake at 350 degrees Fahrenheit for 5 to 7 minutes until fragrant. Let them cool slightly before using.
  • For a cleaner break, allow the bark to chill for 3 hours or more.
  • Store leftover bark in an airtight container in the refrigerator for up to one week.
