Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup shelled pistachios, roughly chopped
  • 1/2 cup dried cranberries

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. In a separate bowl, lightly beat the eggs and stir in the vanilla extract.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Gently fold in the chopped pistachios and dried cranberries.
  6. Turn the dough out onto the prepared baking sheet and shape it into a log, about 10-12 inches long and 2 inches wide.
  7. Bake for 25-30 minutes, or until the log is firm and lightly golden.
  8. Let the log cool on the baking sheet for about 15 minutes.
  9. Reduce the oven temperature to 300°F (150°C).
  10. Carefully transfer the log to a cutting board and slice it into 1/2-inch thick cookies using a serrated knife.
  11. Arrange the sliced biscotti cut-side down on the baking sheet.
  12. Bake for another 10-15 minutes per side, until golden brown and crisp.
  13. Let the biscotti cool completely on a wire rack.

Notes

  • Store biscotti in an airtight container at room temperature for up to two weeks.
  • For extra crunch, bake for a few minutes longer on each side.
