Make thin, crisp, buttery Italian waffle cookies using your pizzelle iron. This recipe provides instructions for both vanilla and anise flavorings.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract OR 1 teaspoon anise extract

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  2. In a separate large bowl, beat the eggs and sugar together until light and slightly thickened, about 2 minutes.
  3. Slowly whisk in the cooled melted butter.
  4. Stir in your chosen extract (vanilla or anise).
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined into a smooth batter. Do not overmix.
  6. Preheat your pizzelle iron according to the manufacturer’s directions. Lightly grease the iron if necessary.
  7. Drop one teaspoon of batter onto the center of the hot iron. Close the lid quickly.
  8. Cook for 30 to 60 seconds, or until the steam stops escaping and the cookie is golden brown and crisp. Cooking time varies by iron.
  9. Carefully remove the pizzelle using a thin spatula and immediately place it on a wire cooling rack. If you want a curved shape, gently drape the hot cookie over a dowel or thin rolling pin.
  10. Repeat with the remaining batter, allowing the iron to reheat between batches.

Notes

  • For the crispest texture, cool the cookies completely on a wire rack. If they soften after cooling, you can briefly reheat them in a 300°F oven for 3-5 minutes.
  • If you want to make almond flavored pizzelles, substitute the vanilla or anise extract with 1 teaspoon of almond extract.
  • To make chocolate pizzelles, reduce the flour by 2 tablespoons and add 2 tablespoons of unsweetened cocoa powder to the dry ingredients.
  • For a traditional holiday look, dust the cooled cookies lightly with powdered sugar.
