Ingredients
Scale
2 lbs pork shoulder, cut into 1-inch cubes
1 large onion, chopped
3 carrots, peeled and thickly sliced
3 celery stalks, chopped
1 lb potatoes, peeled and cubed
4 cups beef broth
1/2 cup dry red wine (optional)
2 tablespoons tomato paste
1 teaspoon dried thyme
1 teaspoon dried rosemary
2 bay leaves
2 tablespoons cornstarch mixed with 3 tablespoons cold water (for slurry)
Salt and black pepper to taste
Instructions
Season the pork cubes generously with salt and pepper.
Place the seasoned pork, onion, carrots, celery, and potatoes into the slow cooker.
In a separate bowl, whisk together the beef broth, red wine (if using), tomato paste, thyme, rosemary, and bay leaves.
Pour the liquid mixture over the pork and vegetables in the slow cooker.
Cover and cook on low for 7 to 8 hours or on high for 3.5 to 4 hours, until the pork is very tender.
Remove the bay leaves. Skim off any excess fat from the surface of the stew.
Stir the cornstarch slurry into the stew. Cover and cook on high for 15 minutes, or until the broth thickens.
Taste and adjust seasoning with more salt and pepper if needed before serving.
Notes
For a deeper flavor, brown the pork cubes in a skillet before adding them to the slow cooker.
If you do not have beef broth, use chicken broth or water with bouillon cubes.
This stew freezes well for future meal prep. Cool completely before freezing in airtight containers.
