- 2 pounds potatoes, such as Yukon Gold or red potatoes, scrubbed
- 1/2 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 tablespoon apple cider vinegar
- 1/4 cup finely chopped red onion
- 2 hard-boiled eggs, chopped
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
- Place potatoes in a large pot and cover with cold water. Add a generous pinch of salt.
- Bring to a boil over medium-high heat, then reduce heat to medium and cook until potatoes are tender when pierced with a fork, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- While the potatoes are still warm, cut them into bite-sized cubes.
- In a large bowl, whisk together mayonnaise, Dijon mustard, and apple cider vinegar.
- Add the chopped red onion, hard-boiled eggs, and parsley to the bowl.
- Gently fold in the warm potato cubes until evenly coated.
- Season with salt and black pepper to your liking.
- Cover and refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- For a tangier flavor, you can add a tablespoon of pickle relish.
- If you prefer a lighter potato salad, you can substitute half of the mayonnaise with plain Greek yogurt.
- Ensure potatoes are cooked until tender but not mushy for the best texture.
