Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup vanilla or unflavored protein powder
  • 1/2 cup shredded carrots
  • 1/4 cup almond butter
  • 2 tablespoons maple syrup
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • Pinch of salt
  • 2-4 tablespoons water or milk (as needed for texture)

Instructions

  1. Place the rolled oats in a food processor and pulse until they resemble a coarse flour.
  2. Add the protein powder, shredded carrots, cinnamon, nutmeg, and salt to the food processor. Pulse a few times to combine the dry ingredients.
  3. Add the almond butter and maple syrup. Process until the mixture starts coming together.
  4. If the mixture is too dry, add water or milk one tablespoon at a time until a sticky dough forms that you can roll.
  5. Roll the dough into small, uniform balls, about 1 inch in diameter.
  6. Place the balls on a parchment-lined plate or tray.
  7. Refrigerate for at least 30 minutes to firm up before serving.

Notes

  • You can customize the spice blend to your liking.
  • For a different flavor, try using a vanilla or unflavored whey or plant-based protein powder.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
