Ingredients

Scale
  • 1 cup rolled oats
  • 1/2 cup pumpkin puree (not pie filling)
  • 1/4 cup almond butter (or other nut/seed butter)
  • 2 tablespoons maple syrup (or honey)
  • 1 tablespoon chia seeds
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • Optional: 2 tablespoons shredded coconut for rolling

Instructions

  1. Place all ingredients, except optional coconut, into a food processor.
  2. Pulse the mixture until it comes together and forms a sticky dough. You may need to stop and scrape down the sides.
  3. If the mixture is too wet, add 1 tablespoon more of oats. If too dry, add 1 teaspoon of water or more pumpkin puree.
  4. Roll the dough into 1-inch balls.
  5. If using, roll the balls in shredded coconut.
  6. Place the energy balls on a parchment-lined plate or container.
  7. Refrigerate for at least 30 minutes to firm up before serving.
  8. Store leftovers in an airtight container in the refrigerator.

Notes

  • These balls keep well in the fridge for up to one week.
  • For a different texture, you can use quick oats instead of rolled oats.
  • Adjust the maple syrup to your preferred sweetness level.
