Make a rich, smooth nacho cheese sauce from scratch in under 10 minutes. This easy recipe uses simple ingredients perfect for dipping chips or drizzling over your favorite Tex-Mex dishes.

Ingredients

Scale
  • 1 tablespoon unsalted butter
  • 1 tablespoon all-purpose flour
  • 1 cup whole milk
  • 8 ounces sharp cheddar cheese, shredded
  • 1/4 teaspoon salt
  • 1/4 teaspoon cayenne pepper (optional, for a kick)

Instructions

  1. Melt the butter in a small saucepan over medium heat.
  2. Whisk in the flour and cook for one minute, stirring constantly to create a roux.
  3. Gradually whisk in the milk until the mixture is smooth. Continue cooking, stirring often, until the sauce thickens enough to coat the back of a spoon, about 3 to 5 minutes. Do not let it boil rapidly.
  4. Remove the saucepan from the heat. Add the shredded cheddar cheese one handful at a time, stirring until each addition is completely melted and smooth before adding the next.
  5. Stir in the salt and cayenne pepper, if using.
  6. Serve immediately while warm for the best texture.

Notes

  • Shred your own cheese; pre-shredded cheese contains anti-caking agents that can make the sauce grainy.
  • For a restaurant-style texture, use a small amount of sodium citrate along with the cheddar, though this recipe works well without it.
  • Keep the heat low when adding cheese to prevent the sauce from breaking or becoming oily.
