Ingredients
Scale
1.5 lb ground beef (80/20 recommended)
1/2 cup breadcrumbs (Ritz cracker crumbs work well)
1/4 cup milk
1 large egg, lightly beaten
1/4 cup finely chopped onion
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 cup ketchup (for the mix)
1/4 cup BBQ sauce (for the glaze)
Instructions
Preheat your oven to 400 degrees Fahrenheit. Lightly grease a 12-cup standard muffin tin.
In a large bowl, combine the ground beef, breadcrumbs, milk, egg, onion, salt, pepper, garlic powder, and 1/4 cup of ketchup. Mix gently with your hands until just combined; do not overmix.
Divide the meat mixture evenly among the 12 muffin cups, pressing lightly to form a compact shape in each cup.
Brush the tops of the meatloaves with the BBQ sauce glaze.
Bake for 20 to 25 minutes, or until the internal temperature reaches 160 degrees Fahrenheit.
Let the mini meatloaves rest in the tin for 5 minutes before carefully removing them.
Notes
For easy cleanup, line the muffin tin cups with paper liners before greasing.
You can prepare the mixture ahead of time and store it covered in the refrigerator for up to 24 hours before baking.
Serve these with instant mashed potatoes and steamed green beans for a complete meal.
