A fast and flavorful method for cooking broccolini until tender-crisp using garlic, olive oil, and fresh lemon juice.

Ingredients

Scale
  • 1 lb broccolini, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, thinly sliced
  • 1/4 cup water or vegetable broth
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh lemon juice

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the sliced garlic and cook for 1 minute until fragrant, being careful not to burn it.
  3. Add the trimmed broccolini to the skillet. Stir to coat with the oil and garlic.
  4. Pour in the water or broth, and immediately cover the skillet. Cook for 3 to 4 minutes until the broccolini is bright green and slightly tender.
  5. Remove the lid. Cook uncovered for another 1 to 2 minutes, stirring occasionally, until most of the liquid has evaporated and the broccolini reaches your desired tenderness.
  6. Remove the skillet from the heat. Stir in the salt, pepper, and fresh lemon juice.
  7. Serve immediately as a side dish.

Notes

  • For extra flavor, add a pinch of red pepper flakes with the garlic.
  • If you prefer a softer texture, cover and steam for an extra minute before uncovering.
  • You can substitute butter for half of the olive oil for a richer taste.
