Make this easy, creamy cheesy rice on the stovetop in under 30 minutes. It is a comforting side dish perfect for weeknight dinners.

Ingredients

Scale
  • 1 tablespoon butter
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice, uncooked
  • 2 cups chicken broth
  • 1/2 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded sharp cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Melt the butter in a medium saucepan over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Do not let the garlic brown.
  2. Add the uncooked rice to the saucepan and stir it with the butter and garlic for about one minute to lightly toast the grains.
  3. Pour in the chicken broth and milk. Add the salt and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan, and simmer for 15 to 18 minutes, or until the liquid is absorbed and the rice is tender. Do not lift the lid during this time.
  5. Remove the saucepan from the heat. Let it stand, covered, for 5 minutes.
  6. Remove the lid. Gently stir in the shredded cheddar cheese and grated Parmesan cheese until the cheese melts and the rice becomes creamy.
  7. Serve immediately as a simple cheesy rice side dish.

Notes

  • For extra creaminess, you can substitute 1/4 cup of the milk with cream cheese, adding it with the shredded cheese in the final step.
  • This recipe works well as a base for adding cooked chicken or steamed broccoli florets before stirring in the cheese.
  • Use long-grain white rice for the best texture in this stovetop cheesy rice recipe.
