Ingredients
Scale
1 baguette, sliced into 1/2-inch rounds
1 tablespoon olive oil
1 pint red seedless grapes
4 ounces soft goat cheese, softened
1 tablespoon honey
1 teaspoon fresh thyme leaves
Pinch of salt
Instructions
Preheat your oven to 400°F (200°C).
Toss the grapes with the olive oil and a pinch of salt on a small baking sheet.
Roast the grapes for 15 to 20 minutes until they begin to burst and caramelize slightly. Remove from the oven and let cool slightly.
While grapes roast, arrange the baguette slices on a separate baking sheet. Toast in the oven for 5 to 7 minutes until lightly golden and crisp.
In a small bowl, gently mix the softened goat cheese with the fresh thyme leaves.
Spread a layer of the thyme goat cheese mixture onto each toasted crostini.
Top each crostini with a few roasted grapes.
Drizzle a small amount of honey over the assembled crostini just before serving.
Notes
You can use different types of goat cheese, like a log or crumbles, but make sure it is soft enough to spread.
If you prefer a softer grape texture, roast them for a few extra minutes.
Baguettes stale quickly; assemble the crostini close to serving time for the best crunch.
