Enjoy this simple, crustless quiche packed with flavor from roasted winter vegetables. It offers a light, low-carb option perfect for any meal.

Ingredients

  • Eggs: 6 large
  • Heavy Cream or Milk: 1/2 cup
  • Roasted Winter Vegetables (e.g., Brussels sprouts, carrots, butternut squash): 2 cups
  • Cheese (shredded, such as Gruyere or Cheddar): 1 cup
  • Salt: 1/2 teaspoon
  • Black Pepper: 1/4 teaspoon
  • Nutmeg (optional): a pinch

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or several ramekins.
  2. Roast your chosen winter vegetables until tender and slightly caramelized. Let them cool slightly.
  3. In a large bowl, whisk together the eggs and heavy cream or milk until well combined.
  4. Season the egg mixture with salt, pepper, and nutmeg.
  5. Scatter the roasted vegetables evenly over the bottom of the prepared pie dish or divide them among ramekins.
  6. Sprinkle the shredded cheese over the vegetables.
  7. Slowly pour the egg mixture over the vegetables and cheese.
  8. Bake for 30 to 40 minutes, or until the center is set and a knife inserted near the center comes out clean.
  9. Let the quiche rest for 5 to 10 minutes before slicing and serving.

Notes

  • You can roast the vegetables ahead of time to save preparation time.
  • Feel free to substitute vegetables based on what you have available; root vegetables work very well.
  • For an extra savory flavor, add a tablespoon of finely chopped cooked bacon or ham.
