Ingredients
Scale
1 sheet puff pastry, thawed
4 ounces goat cheese, softened
2 tablespoons heavy cream
1 tablespoon fresh rosemary, chopped
1/4 teaspoon salt
1/8 teaspoon black pepper
Optional: Honey for drizzling
Instructions
Preheat your oven to 400°F (200°C).
Unfold the puff pastry sheet onto a lightly floured surface.
Gently press the pastry into a tart pan or a muffin tin, trimming any excess.
Prick the bottom of the pastry with a fork.
Bake for 12-15 minutes, or until golden brown. Let cool slightly.
In a bowl, whip the softened goat cheese with heavy cream until smooth and creamy.
Stir in the chopped rosemary, salt, and pepper.
Spoon the goat cheese mixture into the baked tart shells.
Garnish with extra rosemary.
Drizzle with honey, if desired.
Notes
For a crispier crust, consider blind baking the pastry with pie weights before adding the filling.
Adjust the amount of cream to achieve your desired consistency for the goat cheese filling.
Other herbs like thyme or chives can be substituted for rosemary.
