Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 8 tablespoons cold unsalted butter, cut into cubes
  • 3-4 tablespoons ice water
  • 1 cup whole milk ricotta cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg yolk
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg
  • 1 1/2 cups mixed cherry or grape tomatoes, halved
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1 large egg, beaten (for egg wash)
  • A few fresh basil leaves, for garnish

Instructions

  1. Mix flour and salt in a bowl. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. Add ice water one tablespoon at a time, mixing until the dough just comes together. Form into a disk, wrap, and chill for at least 30 minutes.
  3. While the dough chills, toss the halved tomatoes with olive oil, minced garlic, oregano, salt, and pepper on a small baking sheet. Roast at 400°F (200°C) for 10-12 minutes until slightly softened. Let cool.
  4. In a separate bowl, mix the ricotta cheese, Parmesan, egg yolk, pepper, and nutmeg.
  5. On a lightly floured surface, roll the chilled dough into a rough 12-inch circle. Transfer the dough to a parchment-lined baking sheet.
  6. Spread the ricotta mixture over the dough, leaving a 2-inch border around the edge.
  7. Arrange the cooled roasted tomatoes over the ricotta mixture.
  8. Fold the dough edges up and over the filling slightly to create a rustic crust.
  9. Brush the exposed crust with the beaten egg wash.
  10. Bake at 400°F (200°C) for 30-35 minutes, or until the crust is golden brown.
  11. Cool slightly before garnishing with fresh basil and slicing.

Notes

  • Using a mix of colorful tomatoes adds visual appeal.
  • For extra flavor, you can mix 1 teaspoon of fresh thyme into the ricotta.
  • If your tomatoes release a lot of liquid, drain them lightly before placing them on the galette.
