Enjoy a healthier dessert by layering creamy chia pudding with sweet, ripe bananas and a homemade salted caramel sauce. This recipe offers a satisfying treat perfect for satisfying your sweet tooth.

Ingredients

Scale
  • 1/4 cup chia seeds
  • 1 cup milk (dairy or non-dairy)
  • 1 tablespoon maple syrup or sweetener of choice
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • 1 ripe banana, sliced
  • For Salted Caramel Sauce: 1/4 cup brown sugar, 2 tablespoons butter or coconut oil, 2 tablespoons heavy cream or full-fat coconut milk, Pinch of sea salt

Instructions

  1. Combine chia seeds, milk, maple syrup, vanilla extract, and a pinch of salt in a jar or container.
  2. Stir well to prevent clumping. Let it sit for 5 minutes, then stir again thoroughly.
  3. Cover and refrigerate for at least 4 hours, or preferably overnight, until the mixture thickens into a pudding.
  4. While the pudding sets, prepare the salted caramel. In a small saucepan over medium heat, melt the brown sugar until it dissolves and bubbles.
  5. Whisk in the butter or coconut oil until fully incorporated.
  6. Remove from heat and slowly whisk in the heavy cream or coconut milk until smooth. Stir in the sea salt. Let the caramel cool slightly.
  7. To assemble, layer half of the chia pudding in a serving glass.
  8. Top with half of the sliced bananas.
  9. Drizzle with some of the cooled salted caramel sauce.
  10. Repeat the layers with the remaining chia pudding, bananas, and a final drizzle of caramel.
  11. Serve immediately or chill for a short time before enjoying.

Notes

  • You can make the chia pudding base vegan by using non-dairy milk and coconut oil for the caramel.
  • Adjust the sweetener in the pudding to your preference.
  • The salted caramel sauce thickens as it cools; warm it slightly if you prefer a runnier consistency for drizzling.
