Enjoy this Savory Eggplant Parmesan Bake, a wonderful, lighter vegetarian alternative to traditional lasagna. We swap pasta for tender, layered eggplant slices and top it with your favorite cheese and sauce for a satisfying bake.

Ingredients

Scale
  • 2 large eggplants
  • 1 tablespoon salt
  • Olive oil, for brushing
  • 24 ounces marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
  2. Slice the eggplants crosswise into 1/4-inch thick rounds.
  3. Place the eggplant slices on a wire rack set over a baking sheet. Sprinkle both sides generously with salt. Let them sit for 30 minutes to draw out moisture.
  4. Rinse the eggplant slices well under cold water and pat them completely dry with paper towels. This step is key for texture.
  5. Lightly brush both sides of the eggplant rounds with olive oil.
  6. Arrange a single layer of eggplant rounds on the bottom of your prepared baking dish.
  7. Spoon about one-third of the marinara sauce evenly over the eggplant layer.
  8. Sprinkle with one-third of the mozzarella and one-third of the Parmesan cheese.
  9. Repeat the layers two more times: eggplant, sauce, and cheese.
  10. Bake for 25 to 30 minutes, or until the cheese is melted and bubbly and the eggplant is tender.
  11. Let the bake rest for 5 to 10 minutes before slicing and serving. Garnish with fresh basil.

Notes

  • Patting the eggplant very dry after salting prevents a watery final dish.
  • Use a high-quality marinara sauce for the best flavor.
  • You can roast the eggplant slices briefly before assembling for an even firmer texture.
