Ingredients
Scale
1 pound Brussels sprouts, thinly shaved
2 navel oranges, segmented
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
1/8 teaspoon black pepper
1/4 cup toasted pecans, chopped (optional)
Instructions
Prepare the Brussels sprouts by removing any tough outer leaves. Shave them very thinly using a sharp knife or a mandoline slicer. Place the shaved sprouts in a large bowl.
In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, honey, salt, and pepper until the vinaigrette emulsifies.
Pour the vinaigrette over the shaved Brussels sprouts. Toss well to coat every leaf evenly. Let the salad sit for 5 minutes to slightly soften the sprouts.
Gently fold in the orange segments and chopped pecans, if using.
Serve immediately for a tangy and bright salad. Enjoy your lunch!
Notes
For the best texture, shave the Brussels sprouts just before assembling the salad.
You can substitute grapefruit or mandarins for the navel oranges.
If you do not have fresh lemon juice, use lime juice for a different but still bright flavor.
