Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts, cut into 1/2-inch strips
  • 2 bell peppers (any color), sliced
  • 1 large onion, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 2 teaspoons cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • Optional toppings: shredded cheese, sour cream, guacamole, salsa, chopped cilantro, lime wedges
  • Flour or corn tortillas

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a large bowl, toss the chicken strips, sliced bell peppers, and sliced onion with olive oil.
  3. In a small bowl, mix together chili powder, cumin, paprika, garlic powder, cayenne pepper (if using), salt, and black pepper.
  4. Sprinkle the spice mixture over the chicken and vegetables. Toss everything to coat evenly.
  5. Spread the chicken and vegetable mixture in a single layer on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the vegetables are tender and slightly caramelized.
  7. While the fajitas are baking, warm your tortillas according to package directions.
  8. Serve the chicken and vegetable mixture hot with your favorite toppings and warm tortillas.

Notes

  • For extra flavor, marinate the chicken in the spices and oil for at least 30 minutes before baking.
  • Feel free to add other vegetables like zucchini or mushrooms.
  • Adjust the cayenne pepper for your desired level of heat.
