A simple recipe for baking chicken drumsticks and potatoes together on one sheet pan for an easy weeknight dinner with minimal cleanup.

Ingredients

Scale
  • 1.5 lbs chicken drumsticks, bone-in, skin-on
  • 1.5 lbs small potatoes (such as Yukon Gold or red potatoes), quartered
  • 3 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • 0.5 teaspoon black pepper, divided
  • 1 teaspoon dried Italian seasoning
  • 0.5 teaspoon paprika
  • 4 cloves garlic, minced
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, toss the quartered potatoes with 1 tablespoon of olive oil, 0.5 teaspoon of salt, and 0.25 teaspoon of pepper. Spread the potatoes in a single layer on one half of the prepared baking sheet.
  3. In the same bowl (no need to wash it), combine the chicken drumsticks with the remaining 2 tablespoons of olive oil, 0.5 teaspoon of salt, 0.25 teaspoon of pepper, Italian seasoning, and paprika. Toss to coat evenly.
  4. Place the seasoned drumsticks on the other half of the baking sheet, ensuring they do not overlap the potatoes too much.
  5. Roast for 25 minutes.
  6. While the chicken and potatoes roast, prepare the topping: In a small bowl, mix the minced garlic and grated Parmesan cheese.
  7. After 25 minutes, remove the sheet pan from the oven. Sprinkle the garlic Parmesan mixture evenly over the chicken drumsticks.
  8. Return the sheet pan to the oven and bake for another 10 to 15 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) and the skin is crispy.
  9. Remove from the oven, garnish with fresh parsley, and serve immediately.

Notes

  • For extra crispy potatoes, you can toss them with a small amount of cornstarch before seasoning.
  • If you want to add other vegetables like broccoli or green beans, add them during the last 15 minutes of cooking so they do not burn.
  • Use fresh garlic for the best flavor in the Parmesan topping.
