Cook tender chicken legs coated in lemon garlic butter alongside sweet peas using just one sheet pan for simple preparation and cleanup.

Ingredients

Scale
  • 8 bone-in, skin-on chicken legs (drumsticks)
  • 1/4 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 large lemon, zested and juiced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup frozen peas, thawed slightly
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large, rimmed baking sheet with parchment paper for easier cleanup.
  2. In a small bowl, combine the melted butter, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper. Mix well.
  3. Place the chicken legs on the prepared baking sheet, ensuring space between each piece.
  4. Brush the lemon garlic butter mixture evenly over all sides of the chicken legs.
  5. Place the baking sheet in the preheated oven and roast for 25 minutes.
  6. While the chicken roasts, toss the thawed peas with the olive oil in a separate small bowl.
  7. After 25 minutes of cooking, remove the sheet pan from the oven. Push the chicken legs to one side of the pan.
  8. Spread the seasoned peas on the empty side of the sheet pan.
  9. Return the sheet pan to the oven and continue roasting for another 10 to 15 minutes, or until the chicken skin is golden brown and crisp, and the internal temperature reaches 165°F (74°C).
  10. Remove from the oven and let the chicken rest on the pan for 5 minutes before serving immediately with the roasted peas.

Notes

  • For crispier skin, you can briefly place the chicken under the broiler for the last 2 minutes, watching closely to prevent burning.
  • If you prefer a stronger garlic flavor, use 5 cloves of garlic.
  • You can substitute frozen green beans for the peas if desired, adding them at the same time as the peas.
