Ingredients
Scale
1.5 lbs salmon fillet
1 lb broccoli florets
1 red bell pepper, chopped
1 red onion, cut into wedges
3 tablespoons olive oil
1/4 cup maple syrup
2 tablespoons Dijon mustard
1 tablespoon soy sauce
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, toss the broccoli florets, chopped red bell pepper, and red onion wedges with 2 tablespoons of olive oil, salt, and pepper. Spread the vegetables in a single layer on a large baking sheet.
Roast the vegetables for 10 minutes.
While the vegetables are roasting, prepare the glaze. In a small bowl, whisk together the maple syrup, Dijon mustard, soy sauce, garlic powder, and the remaining 1 tablespoon of olive oil.
Remove the baking sheet from the oven. Push the vegetables to one side and place the salmon fillet on the empty side of the baking sheet.
Brush the salmon generously with the maple-Dijon glaze.
Return the baking sheet to the oven and bake for another 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender and slightly caramelized.
Serve immediately.
Notes
You can substitute other vegetables like asparagus, Brussels sprouts, or sweet potatoes.
For a spicier glaze, add a pinch of red pepper flakes.
Ensure the salmon is not overcooked to maintain its moisture.
