A simple and delicious sheet pan dinner featuring sticky sesame chicken and tender broccoli, perfect for a weeknight meal.

Ingredients

Scale
  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1 head broccoli, cut into florets
  • 1 red bell pepper, chopped
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons vegetable oil
  • Sesame seeds, for garnish
  • Chopped green onions, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. In a medium bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, grated ginger, and red pepper flakes (if using).
  3. Add the chicken pieces to the bowl and toss to coat evenly. Let it marinate for at least 10 minutes.
  4. While the chicken marinates, toss the broccoli florets and chopped red bell pepper with vegetable oil, salt, and pepper in a separate bowl.
  5. Arrange the marinated chicken and the vegetables in a single layer on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the broccoli is tender-crisp.
  7. Broil for the last 1-2 minutes to get a nice caramelization on the chicken and vegetables.
  8. Garnish with sesame seeds and chopped green onions before serving.

Notes

  • For extra flavor, you can marinate the chicken for longer, up to 30 minutes.
  • If you don’t have rice vinegar, apple cider vinegar can be used as a substitute.
  • Feel free to add other vegetables like carrots or snap peas.
