Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 1 pound small red potatoes, quartered
  • 1 pound smoked sausage, cut into 1-inch pieces
  • 2 ears of corn, husked and cut into 3-inch pieces
  • 1/2 cup unsalted butter, melted
  • 2 tablespoons lemon juice
  • 1 teaspoon Old Bay seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Lemon wedges, for serving
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. Divide the potatoes and sausage evenly among the four foil pieces, placing them in the center.
  4. Top the potatoes and sausage with the corn pieces.
  5. In a small bowl, whisk together the melted butter, lemon juice, Old Bay seasoning, garlic powder, and black pepper.
  6. Pour the butter mixture evenly over the ingredients in each foil packet.
  7. Bring the sides of the foil together and crimp tightly to seal, creating four individual packets.
  8. Place the foil packets on the grill or in the oven.
  9. Grill for 15-20 minutes or bake for 20-25 minutes, or until the potatoes are tender and the shrimp are pink and cooked through.
  10. Carefully open the foil packets.
  11. Serve immediately, garnished with fresh parsley and with lemon wedges on the side.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the butter mixture.
  • Ensure the foil packets are sealed tightly to prevent steam from escaping.
  • Adjust cooking time based on the size of your potato pieces.
