A comforting and hearty Slow Cooker Beef Stroganoff Soup, perfect for a cozy meal. This recipe brings together tender beef, creamy mushrooms, and savory broth for a satisfying dish.

Ingredients

Scale
  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 8 ounces mushrooms, sliced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup sour cream
  • 2 tablespoons chopped fresh parsley

Instructions

  1. In a bowl, toss beef cubes with flour, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Brown beef in batches, then transfer to a slow cooker.
  3. Add onion and mushrooms to the skillet and cook until softened, about 5-7 minutes. Add garlic and cook for 1 minute more.
  4. Transfer the onion and mushroom mixture to the slow cooker.
  5. Pour beef broth over the ingredients in the slow cooker.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until beef is tender.
  7. Stir in sour cream until well combined.
  8. Serve hot, garnished with fresh parsley.

Notes

  • For a thicker soup, you can mix 2 tablespoons of cornstarch with 2 tablespoons of cold water and stir it into the slow cooker during the last 30 minutes of cooking.
  • You can substitute beef sirloin for beef chuck, but reduce the cooking time.
  • Serve with egg noodles or crusty bread.
